Ingredients: 

1 tablespoon of freshly squeezed lemon juice
Zest from 1 (organic) lemon
½ cup sugar & powdered sugar for dusting
8 tbl spoons of butter
2 eggs
1 teaspoon of vanilla extract
1 tbl spoon of honey
1 cup of flour
½ teaspoon of baking powder
butter baking spray (optional)

Preparation: Preheat the oven to 400°F. Spray the baking pan/molds with the butter spray (or use regular butter). In a large mixing bowl combine the sugar, eggs, lemon zest, lemon juice and vanilla extract. Melt the butter in a small sauce pan and stir in the honey. Add to the mixing bowl. Add flour and baking powder and stir until combined. Fill each cookie mold almost to the top and bake for 10-15 minutes.

The surface of the cookies should be golden brown when they’re done. Let cool for about 5 minutes and remove the individual cookies. Dust with powdered sugar before serving.
