Ingredients:

1 acorn squash

6 eggs

Bacon bits from about 3 slices of bacon

2 tbsps. of Chives, finely chopped

Salt & pepper

Turmeric powder

Olive oil

PREPARATION:

Preheat oven to 350°F. Drizzle olive oil on a baking sheet. Slice the squash in about 1 ½ inch thick slices. You should have at least 6 slices with the seeds in the middle. Cut out the middle part. Place slices on the baking sheet. (You can drizzle little more oil on top). Bake for about 10 minutes. Remove the sheet from the oven. Crack the eggs, placing each in the cut-out circle of each slice. Season with salt, pepper, and turmeric and bake for additional 8-10 minutes. Place on a dish and sprinkle with fresh chives and bacon bits. This beautiful breakfast will make your family smile for sure!
