INGREDIENTS:

6 boneless, skinless chicken breasts

3 ripe peaches

6 slices of ham

12 slices of provolone cheese

Salt & Pepper

1 tablespoon of butter

Blue cheese – crumbles or 6 thin slices

Cilantro or Parsley for garnish

Wooden toothpicks

6 large potatoes

Oil for frying

*Feeds 6 people

PREPARATION:

Preheat oven to 400°F. Clean the chicken breasts and tenderize them. Season with salt and pepper. Place ham & cheese slices on each breast and roll them into rolls. Secure with toothpicks if necessary and place in a baking dish filled with about an inch of water. Place a thin slice of butter on top of each chicken breast. Cut peaches into slices and place them around and on top of the meat. Bake for about 60 minutes. In the meantime cut potatoes into wedges and fry until golden brown. Place them on a paper towel and season with your favorite seasoning or sea salt. Plate the dish, placing peach slices on top of the meat, adding a slice or crumbles of blue cheese and parsley.
