INGREDIENTS

1 Package of your favorite pasta

Olive oil, Salt

Meat Sauce:

20 oz. Ground Turkey meat

½ stick of butter

1 yellow onion

3-4 medium tomatoes (organic and locally grown will be more flavorful), diced

1 cup of mixed cherry tomatoes (yellow & red) – optional

2 cloves of garlic – pressed or finely chopped

1 cup of parmesan cheese

2 cups of fresh spinach leaves

1 package (8 oz.) of mushrooms (such as Baby Bellas), sliced

1 yellow bell pepper

1 banana pepper – optional

About 1 cup of ketchup

2 cups of water

Flour

Salt & Pepper

Oregano, Basil (or mixed Italian Seasoning)

2 table spoons of brown sugar

1 cube dried bouillon

½ cup of finely chopped parsley

Parsley or Cilantro and Parmesan cheese for garnish

*Feeds 4-6

PREPARATION

In a large pot melt butter. Add finely chopped onion and let simmer. Brown the turkey meat, season with salt & pepper. Add brown sugar. Mix in diced tomatoes, bell peppers and mushrooms and add about 2 cups of water. Let cook for about 15 minutes, stirring occasionally. Mix in ketchup, bouillon, pressed garlic cloves and seasoning. Later on, add the cherry tomatoes and spinach. I add them later purposely, to add texture and to preserve vitamins and nutrients. If the sauce is too thin, you can thicken it – mix about 3 table spoons of flour in a larger cup of water (make sure there are no lumps) and slowly pour the liquid into the meat sauce, while stirring. At the end, add cheese and finely chopped parsley. Serve with your favorite pasta and garlic bread.
