INGREDIENTS:

1 package of mixed spring greens

1 package (8 oz.) of rainbow quinoa

3 peaches

6-8 fresh strawberries

1 cup of blackberries

1 cup of seedless grapes

Feta cheese crumbles

Salt & Pepper

Dressing:

Juice from 2 oranges

4 tablespoons of olive oil

PREPARATION:

Cook quinoa, adding a teaspoon of salt. Fluff up the seeds with a fork when done. Wash salad greens and all the fruit, slice the peaches, strawberries and cut the blackberries and grapes in half. Place greens on the plate first, then quinoa and then the fruit. Drizzle lightly with the orange & olive oil dressing and sprinkle with Feta cheese crumbles. Add fresh pepper to your liking.
