It’s becoming more and more difficult to please a crowd when it comes to party foods. With as many food allergies as we are facing today, you, as the host, cannot just serve a bowl of roasted nuts; bacon & cheese dip and call it a day! Even without food intolerances there are many people conscious of their diet, watching their calorie intake as well as whether the produce is organic or not.

IMG_8822Just for all those reasons I like to serve a large variety of appetizers, making perhaps smaller plates but giving the guests more options. Just recently I had a visitor who informed me upon arrival that she’s a vegetarian. Instead of panicking, I was able to offer her multiple snacks, which she loved. The key is to keep it simple, fresh and visually appealing. Even a fruit tray can look very attractive if you serve it in a new, playful way!

Cucumber Bites 

1 Package of Cream Cheese

1 Table Spoon of Freshly Chopped Chives

1 Cucumber

1 Package of Cherry Tomato Medley (the more colors, the better)

Salt, Pepper

Preparation:

IMG_8806Wash all vegetables. Using a peeler, peel stripes of the cucumber skin, creating a pattern. Slice the cucumber and cut tomatoes in half. In a bowl, mix the cream cheese and add chopped chives and season with salt and pepper to your liking. Fill an icing decorating bag with the cream cheese mixture and make little circles on top of each cucumber slice. Sit the tomatoes in the middle of each slice and garnish with additional chives or parsley.
