INGREDIENTS

1 package smoked salmon

½ cucumber – sliced

4 tbl spoons of plain Greek yogurt

Fresh dill

Red Onion for garnish

Lemon zest from 1 lemon, 2 teaspoons of lemon juice, plus a few slices for garnish

Salt & Pepper

*feeds 4-5 people

PREPARATION

Cut the smoked salmon into small pieces. Pay attention to the packaging – sometimes the salmon may have sea salt added and it may taste too salty. Slice the cucumber. In a small bowl mix yogurt, lemon zest & lemon juice, add chopped fresh dill, salt and pepper to your liking. On each slice of cucumber, place a small amount of the yogurt dressing, salmon and garnish with onion and a piece of fresh dill. Secure the perfect bite with a toothpick. Perfect as a healthy appetizer or a colorful party tray!
