1 Cup of Milk
1 Egg & 2 Egg Yolks
4 Tablespoons of Sugar
½ Stick of Butter
Pinch of Salt
Teaspoon of lemon zest (optional)
Few Drops of Vanilla Extract
1 Package of Instant Yeast
1 Teaspoon of Baking Powder
4 Cups of Flour
Oil for Frying

In a food mixer, combine eggs and sugar. Slowly add warm milk and melted butter. Add salt and zest and vanilla extract. Mix the instant yeast and baking powder into the approximately 4 cups of flour and then add to the wet ingredients. Let the machine mix the dough until smooth. (Or kneed until then). Cover the dough with a plastic wrap and let rise in a warm place. If you use the fast instant yeast, you should be ready to fry in about an hour. Roll out the dough until about 1 and ½ inch thick. Using a cookie cutter or a small circumference glass, cut out circles from the dough. Heat up the oil in a deep frying pan or in a deep fryer. Place the donuts in. They should rise up a little. Lower the heat to medium and turn the donuts over once golden brown. Place on a paper towel to get rid of any excess oil. Dust with powdered sugar and garnish with your favorite fruit. If you have a pastry injector, you may fill them with jelly or cream. I served them plain and with Nutella – hazelnut spread.
