What you will need:
1 ¾ cups of powdered sugar
8.5 oz shredded coconut (unsweetened)
5 egg whites
½ cup chocolate chips
1 ½ tbl spoons of butter
*makes about 30 puffs
Preparation:
Preheat oven to 350°F. In a large bowl stir sugar with unsweetened shredded coconut (can be obtained at Whole Foods and Central Market but also at Fiesta and some Wal-Mart locations). Add egg whites and mix together until paste-like dough is formed. Using a spoon, scoop small amount into the palm of your hand and form a ball. Place these balls evenly on a baking sheet lined with parchment paper or a silicon baking mat. Bake for about 10-15 minutes or until the surface of the puffs starts to look golden brown. Let cool. Melt chocolate chips with butter in a double boiler and either using a teaspoon or a cake decorating bag drizzle some chocolate on top of the puffs. Let the chocolate cool and harden and serve! (Store puffs in a closed container in a dry and cool place or freeze to enjoy later!)
