Great and guilt-less dish for the upcoming hot summer months!
What you will need to feed 4 people:
1 Large Carrot
1 Cucumber
½ Red Bell Pepper
½ Yellow Bell Pepper
3 Spring Onions
8 Small Pork Sirloin Cutlets (about 20 oz)
Salt & Pepper
Coconut Oil for Frying
Lemon Juice (optional)
Spicy Mayo (Or mix 1 tablespoon of your favorite hot sauce into 3 tablespoons of mayonnaise)
Black Sesame Seeds for Garnish
Preparation:
Cut the pork meat into about 1 ½ inch thick steaks. Season with salt and pepper. Preheat the frying pan with coconut oil (1-2 tablespoons). Sauté the meat until light pink on both sides, then cover with a lid and let cook for additional 10 minutes or until cooked through and tender. While the meat is cooking, wash and cut the veggies into very thin slices. Arrange them on a plate, alternating the colors. In a small bowl mix mayonnaise and a hot sauce to serve on top of the vegetables. Place the pork steak next to the veggies and garnish with green onions and sprinkle with black sesame seeds. You can drizzle a small amount of lemon juice over the dish to enhance the flavors.
