Feeds about 5 people

2 large turkey breast sirloins

Salt & pepper to your liking

Oil – about 4 tbsp.

Mango Salsa:

2 ripe mangos

½ red onion

1/3 cup Cilantro – chopped

1 Pepper (jalapeño – optional)

1 tomato

Lemon zest from 1 lemon

Lemon juice from 1 whole lemon

Lime juice from 1 whole lime

Salt & Pepper to taste

Preheat oven to 350°F. Clean the meat, dry with a paper towel and season with salt & pepper. You can use additional spices to your liking but since the mango salsa is fragrant and rich in flavors, do not over-season the meat. You can also buy a pre-marinated meat, which adds flavor and juices to the sirloins! Grease the baking pan with a small amount of oil just so the meat doesn’t stick. Place the meat in the pan and pour about ½ cup of water in. Turkey doesn’t take too long to bake. Depending on the thickness of the sirloins, roast in the oven for about 40-60 minutes. While the meat is roasting, prepare your salsa. Cut the mangos into small cubes; chop ½ of a red onion, cilantro and pepper of your preference. (If you want your salsa to have a little “kick”, add a jalapeño pepper). Add chopped tomato, lemon zest and lemon and lime juice. Mix well and add salt & pepper to your liking.

Once done, slice the sirloin and plate either on a tray or individual plates. Place the salsa on top and serve with your favorite side dish. I used brown rice and a salad. It is a low calorie dish, yet very juicy, flavorful and satisfying. Enjoy!
